Paleo Pumpkin Pie Bars

Skinny jean season is among us my friends.  But this season also comes with plenty of tasty fall goodies.  When I'm craving something sweet I turn to Paleo recipes.  The paleo diet involves cutting out grains and anything unnatural.  This weekend I created this delicious Paleo Pumpkin Pie Bar recipe and wanted to share it with all of you.

What You Need:

Filling:

  • 15 oz of Pumpkin Puree
  • 1/4 cup of honey
  • 1/4 cup of coconut milk
  • 1 egg 
  • 3/4 tsp cinnamon
  • pinch of salt
Crust:
  • 1/4 cup of ghee
  • 2 tbsp coconut oil
  • 1 cup coconut flour
  • 3 eggs
  • 1 tbsp of honey
  • pinch of salt
  • 1/2 cup of shredded coconut
  • 1 tbsp water

{one} Mix up your crust ingredients and press into a coconut oiled 9 x 9 pan


{two} Mix up your filling ingredients and layer on top of your crust

{three} Bake for 45 minutes @ 350

{four} Refrigerate your pumpkin bars overnight.


I was amazed at how well these turned out, they were a piece of pie to whip up AND healthy.
