Paleo Cinnamon Raisin Muffins

Pumpkin candles are all over my house right now, but I also picked up a cinnamon candle this past weekend.  The scent of cinnamon is also a favorite of mine for Autumn.  Which brings me to these delicious Paleo Cinnamon Raisin Muffins.  They're healthy, they're delicious, and they're perfect for fall...

What you need:
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3 tablespoons cinnamon
  • 2 eggs
  • 1/4 cup coconut oil
  • 2 tbsp coconut milk
  • 1/2 cup coconut sugar
  • 1/2 cup raisins

{one} Add all you ingredients into the mixing bowl, except your raisins, and mix them up!  Then fold in your raisins.


{two} Divvy up your batter into muffin tins.  This recipe will make about six muffins.

{three} Bake for 16 minutes @ 375.



Voila, you're done!  These are perfection in a pinch.  If you can manage to not eat them all immediately simply store them in your refrigerator and when you're ready for a snack, pop them in the microwave for 30 seconds.
